Last night I did an amazing cooking class where I taught some really yummy recipes to a beautiful bunch of people interested in healthy, allergy friendly foods. Was so good to hear the moans of satisfaction at the end of the class as they tucked in! Healthy Christmas food CAN taste awesome!!
Fruit Mince Pies
MINCE:
1 apple- grated
1 nectarine- finely grated
1/2 cup dried currants/sultanas
1/4 cup dried figs/apricots
1/4 cup dried cranberries
50ml orange juice+ zest from 1 orange
Pinch each cinnamon, vanilla, nutmeg, cardamom, cloves.
1 Tbsp coconut sugar
Soak everything together for at least 1/2hr. Pop into saucepan and simmer slowly for 30mins til liquid is reduced and sticky.
PASTRY:
1 cup (120g) tapioca flour
1/4 cup each sunflower and pumpkin seeds
1/4 cup chia seeds
50g coconut oil
Pinch salt
60ml orange juice
EXTRA: 1/4 cup coconut sugar (pop into blender til powdery) for decoration
Blitz the seeds until powdery.
Pop into blender and blitz til fine- add OJ a bit at a time (may not need all). Until dough comes together. Take out, form into three balls and chill.
Preheat oven to 180C
Roll out dough. Put into greased muffin tins or silicon moulds. Cut out the same amount of stars and pop onto a lined tray. CHILL again.
Fill the bases with a spoonful of fruit mince. Top with a star. Bake 10-15mins til golden.
Dust with icing sugar (puree coconut sugar til dusty)
