Whenever I was sick as a kid, my Mum would heat a can of tomato soup up, and serve it with buttery toast sticks, and it always felt like it made me better and gave me comfort. Coming into winter, there’s always some random illness flying around, so if your family needs some old fashioned comfort food, a good soup based on a home made stock is the way to go!! I am a cook from scratch type of gal though, so here’s the recipe for sick person soup:

Step one make a quick stock: Chuck a chicken carcass in a pot with some onion, carrot, celery, thyme, and parsley, cover it with water, and bring to the boil. Simmer for at least an hour (you can go overnight if you have time!). Then strain the stock out into a clean pot (or into a jug, empty the cooked vegies into the compost, and return the stock to the pot). Should make about 1 Litre or so…
Step two: Add about 8 roughly cut tomatoes to the stock, bring to the boil, and simmer for 20mins. Just before blitzing add a few leaves of kale, 1 clove garlic, and a bit of basil and fresh thyme, and then puree til smooth. Mix in a tiny bit of yoghurt or coconut cream to serve.
Serve it with buttery toast soldiers.
Making it on homemade stock will help boost the immunity, tomatoes are packed full of vitamins, minerals and antioxidants, and including garlic and thyme in it just prior to pureeing it will help fight viruses.
