Every time I chat with someone who has just found out they have food allergies or food intolerances, I want them to come over to my house for a week and let them know how easy it is to make allergy friendly food! It’s not hard to cook without gluten or dairy or nuts, or whatever else it is you need to remove.. the trick is to focus on the foods that you CAN eat! And then get experimenting !! These muffins were the result of one of my many many kitchen experiments, and seriously, they are fantastic!!
3/4 cup pumpkin seeds
2 Tbsp oil
1/2 cup maple sugar
1 tsp chia seeds
1.5cups quinoa flour
1/2 cup des. coconut
1 tsp ground turmeric
1/2 tsp ground cinnamon
1 Tsp vanilla extract
1 Tbsp quinoa flakes
Blitz pumpkin seeds finely, add everything else except flakes.
Puree til smooth but just combined.
Put into muffin moulds. Sprinkle with quinoa flakes.
Bake 20-25mins at 180c. Makes 15
YUMMO! Enjoy with a nice cup of tea or pop it in your lunch box for a nice afternoon tea treat!
